I just finished Uncharted 3. Tes, this game is just as amazing as the previous 2. Not quite as good as the second, but that's not a complaint. The only problem I had was there was one bit where you're walking fthrough the desert for like five minutes, and it goes on a little too long. Otherwise, I can't say enough about this.

The desert stuff, was it just walking nothing else?
How was the sinking boat stuff?

The first part of the desert mission, yes. It's ok for the first couple of minutes. Then it gets tiresome.
That part was great.

Maybe they wanted to extend the game by a few minutes cause they thought it was short?
Are the backgrounds as lush and breathtaking as they are in the first 2?

Nah, they were going for a more visual thing than anything else.
Of course!

Your description above sounds a lot like that level is just like the village level in 2. You walk around and do essentually...well nothing. At least in 2 you can get a trophy for petting yaks though. ;D
